I didn't grow up eating homemade cookies very often, if at all. When I got to college and started living in apartments with roommates, so many of them made homemade cookies and I loved the smell and taste of them. Funny thing is, back then I still preferred the taste of store-bought cookies like Oreos and Chips Ahoy (Chips Ahoy being my favorite). I've since learned and now appreciate the incomparable taste of a soft, homemade cookie. I got this recipe from my roommate Kimberly Ladd. It's the recipe we used for years until finding our Extraordinary Chocolate Chip Cookie recipe. This is a great oatmeal chocolate chip recipe. --Stacy
Ingredients:
1 cup sugar
1/2 cup brown sugar
1 cup butter
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
2 cups flour
2 cups quick oats
1 cup chopped pecans (optional)
chocolate chips
Instructions:
Cream sugar and butter. Add eggs and vanilla. Sift and add dry ingredients. Stir in oats, nuts, and chocolate chunks. Drop by teaspoons or scoops on greased baking sheet. Bake at 350° for 10 minutes.
Notes:
This recipe is also good for oatmeal raisin cookies.
