Two-Ingredient Flourless Brownies

Stacy was looking for a low-carb brownie recipe and came across this one. I was skeptical, but they actually turned out great! They're sort of dense, like a protein bar and so delicious! --Mark


Ingredients

4 large eggs
10 oz. semisweet chocolate chips

Directions

Preheat oven to 350°F. Line an 8 x 8 inch baking pan with parchment paper.

In the bowl of a stand mixer (you can also do this with a hand mixer), add eggs. Using the wire whisk attachment, beat eggs until frothy. Increase mixing speed to highest setting and continue to beat eggs for about 8 minutes. You want to beat the eggs until they change color (they will become a very pale eggshell yellow), the egg mixture becomes more than triple in volume and the egg mixture becomes very thick. To check if your mixture is ready, lift up your beater and watch the egg mixture that drizzles down from your beater back into the bowl. It should sit on the surface of your mixture for several seconds and not immediately sink in.

While your eggs are beating (if you are using a hand mixer you can do this after), melt your chocolate. You can do this in the microwave or on the stove. If using microwave, melt at 30 second intervals (this should take around 2 minutes total), stirring in between, until chocolate is completely melted and smooth. Let chocolate cool slightly so it's no longer too hot to touch. You don't want the chocolate to cool completely because then it won't be melted anymore. 

Add in 1/3 of the egg mixture. Fold in the egg mixture using a spatula until egg is completely incorporated. Repeat with another 1/3 and then remaining 1/3. Towards the end, your chocolate may start getting a little stiff. That is okay. Break up any chocolate clumps using your spatula. 

Pour batter into prepared pan. 

Bake for about 25-30 minutes or until a toothpick inserted comes out clean. The surface of the brownies should also be firm. Let brownies cool before cutting and serving.

Chewy Peanut Butter Brownies

Um. Yum. Need I say more. Peanut butter. Brownies. There. I said more. --Mark

Ingredients:

1/2 cup peanut butter
1/3 cup margarine, softened
2/3 cup white sugar
1/2 cup packed brown sugar
2 egg
1/2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt

Instructions:

Preheat oven to 350 degrees F (175 degrees C ). Grease a 9x9 inch baking pan.

In a medium bowl, cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.

Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.

Michelle's Peanut Butter Marbled Brownies

Other than our marriage, peanut butter and chocolate may be the most perfect marriage. Anything that combines the two is bound to be oh so delicious, and these brownies are no exception. We make them way too much, but at least we share. Sometimes. --Mark

Ingredients:

2 (3 ounce) packages cream cheese,
softened
1/2 cup peanut butter
1/4 cup white sugar
1 egg
2 T milk

1 cup butter or margarine, melted
2 cups white sugar
2 teaspoons vanilla extract
3 eggs
3/4 cup unsweetened cocoa powder
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup semisweet chocolate chips

Instructions:

Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.

In a medium bowl, beat cream cheese, peanut butter, 1/4 cup white sugar, 1 egg, and milk until smooth. Set aside.

In a large bowl, mix together melted butter, 2 cups white sugar, and vanilla. Mix in the remaining 3 eggs one at a time, beating well after each addition. Combine flour, cocoa, baking powder, and salt; mix into the batter. Stir in chocolate chips.

Remove 1 cup of the chocolate batter. Spread the remaining batter into the prepared pan. Spread the peanut butter filling over the top. Drop the reserved chocolate batter by teaspoonful over the filling. Using a knife, gently swirl through the top layers for a marbled effect.

Bake in preheated oven for 35 to 40 minutes, or until a wooden toothpick inserted near the center comes out almost clean. Cool completely, then cut into bars.

Notes:

Just use an 8-oz package of cream cheese to make it easier. Also, we usually double the peanut butter. It makes a big difference.

Chocolate Chip Cream Cheese Bars

I cut this out of a box of cake mix. I must've intended to make it. Alas, you know what they say about the road to hell. We're not that big into desserts (especially if they're not cookies), but I'll try it and report back (or delete it if it's gross). How's that for a sales pitch? -- Stacy

Ingredients:

1 package devil's food cake mix
1 package (8 oz.) cream cheese, softened
1/2 cup powdered sugar
1 cup whipping (heavy) cream
1 1/2 tsp. vanilla
1/2 package miniature semisweet chocolate chips (1 cup)

Instructions:

Heat oven to 350°. Prepare, bake, and cool cake as directed on package for jelly roll pan. Beat cream cheese in medium bowl on medium speed until smooth. Beat in powdered sugar, whipping cream, and vanilla on medium speed about 2 minutes or until thickened. Spread over cake. Sprinkle chocolate chips over cheese mixture. Refrigerate at least 1 hour until cheese mixture is firm. Cut into 2x1 1/2-inch bars. Refrigerate any remaining bars.

Notes:

Makes 49 bars.

Lemon Cheesecake Squares

Not to be confused with lemon squares, this is a recipe that I'm not even sure we've ever tried, but I did cut it out of something and it has a picture of Quaker Oats and Crisco on it, so I'm going to guess it was sponsored by those 2 companies. --Stacy

Ingredients:

Crust:

3/4 cup Crisco (blech, use butter)
1/3 cup firmly packed brown sugar
1 1/4 cups flour
1 cup Quaker Oats (quick oats, uncooked)
1/4 tsp. salt

Filling:

1/2 cup seedless raspberry jam
2 8-oz packages cream cheese, softened
3/4 cup granulated sugar
2T flour
2 eggs
3T lemon juice
2 tsp. grated lemon peel

Instructions:

Heat oven to 350° F. Grease 9x13 pan. For crust, beat butter and brown sugar until fluffy. Add combined dry ingredients and mix well. Press on to bottom of prepared pan. Bake 20 minutes or until light brown. Spread jam over hot crust.

For filling, beat cream cheese, sugar, and flour at medium speed until fluffy. Add eggs, one at a time, beating well after each. Add lemon juice and peel, mixing until smooth. Pour over preserves. Bake 25 minutes or until set. Cool completely. Chill. Store covered in refrigerator.

Notes:

Makes 24 squares. Garnish with fresh raspberry, mint leaf, and one sliver grated lemon peel.

Milk Chocolate Brownies

We haven't tried this one yet. We cut it out of something we got from Albertson's, obviously years ago since we haven't lived in the west for about 7 years now. I'll have to give this one a go and report back. --Stacy

Ingredients:

Package of 21.5 oz. brownie mix
6 oz. chopped walnuts, pecans, or both
2 eggs
1 tsp. vanilla
8 oz. whipped topping (thawed)
1/2 cup chocolate chips
1/2 cup white chocolate chips

Instructions:

Preheat oven to 325° F. Grease bottom of 9x13 pan. In a large bowl, mix thawed whipped topping, eggs, and vanilla until smooth. Stir in brownie mix just until moistened. Stir in nuts, spread mixture into pan. Sprinkle chocolate chips on top. Bake for 30-40 minutes or until toothpick comes out clean. Do not over bake. Cool and slice.

Notes:

Serves 10-12.

Lemon Squares

I love lemon bars. So delicious. So fresh. So zesty. And it hits the spot during those rather odd times when one isn't craving something chocolate. I first had lemon squares on my first trip west when I was about 12. I probably got this recipe about that long ago. Or I might've gotten it in college from a roommate. I'm not sure. I am sure it's a keeper and I do know it's good. -- Stacy

Ingredients:

Crust:

1/2 cup soft butter
1 cup flour
1/4 cup powdered sugar

Top layer:

2 eggs
3/4 cup sugar
2T flour
2T lemon juice
Grated rind of lemon

Instructions:

Cream butter and sugar. Add flour. It will be crumbly. Spread in 8x8 inch pan by pressing it into the pan. Bake at 325° F for 15-20 minutes.

Beat eggs and add sugar, flour, lemon juice, and rind. Mix well and pour over hot crust. Bake at 325° F for 15-20 minutes. Remove and sprinkle with sifted powdered sugar. Cool slightly before cutting.

Notes:

Weird, but true -- our dog Scout loves these! When this recipe is doubled, it fits into a 10x15 pan. My recipe card says it's great with ice cream. That may be true, but we like them plain. Yum!

Cookie Dough Brownies

I got this recipe from a fellow Portuguese teacher at the MTC, Laura Dagley. These look AMAZING and taste fantastic, too. I just had to get the recipe. This one is always a big hit. It looks just like cookie dough on top (only it's cooked). So inviting! --Stacy

Ingredients:

2 cups sugar
1 1/2 cups flour
1/2 cup baking cocoa
1/2 tsp. salt
1 cup vegetable oil
4 eggs
2 tsp. vanilla
1/2 cup chopped walnuts

Topping:

1/2 cup butter
1/2 cup brown sugar
1/4 cup sugar
2 T milk
1 tsp. vanilla
1 cup flour
Chocolate chips

Instructions:


Combine sugar, flour, cocoa, and salt. Add oil, eggs, and vanilla. Beat at medium speed for 3 minutes. Stir in walnuts. Pour into greased 9x13 pan. Bake at 350° F for 30 minutes. Cool completely.

Topping: Cream butter and sugars. Add milk and vanilla. Mix well. Beat in flour. Spread on brownies. Chill until firm. Top with chocolate chips.

Notes:

These look amazing!! Just like cookie dough on top of brownies!

Chocolate Chip Brownies

Ingredients:

1 cup softened butter
3 cups sugar
6 eggs
1 T vanilla
2 1/4 cups flour
1/2 cup baking cocoa
1 tsp. salt
1 cup chocolate chips
1 cup vanilla baking chips
1 cup chopped walnuts

Instructions:

Cream butter and sugar. Add eggs and vanilla; mix well. Combine flour, cocoa, baking powder, and salt. Stir into creamed mixture just until blended. Pour into greased 15x10x1 pan. Sprinkle with chips and nuts. Bake at 350° F for 30-35 minutes.

Blonde Brownies

This is yet another recipe from my old college roommate, Katie Dahl. It's easy and delicious. -- Stacy

Ingredients:

1/2 cup butter
1 1/2 cup brown sugar
2 eggs
1 1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. vanilla
1/2 cup nuts
1 cup chocolate chips

Instructions:

Melt butter in saucepan. Add remaining ingredients, except chocolate chips. Stir well until smooth. Pour into greased 9x13 pan. Sprinkle on chocolate chips and bake at 350 for about 20 minutes.

Notes:

A nice break from the usual (and indubitably delicious) chocolate brownies.
