Lemon Squares

I love lemon bars. So delicious. So fresh. So zesty. And it hits the spot during those rather odd times when one isn't craving something chocolate. I first had lemon squares on my first trip west when I was about 12. I probably got this recipe about that long ago. Or I might've gotten it in college from a roommate. I'm not sure. I am sure it's a keeper and I do know it's good. -- Stacy

Ingredients:

Crust:

1/2 cup soft butter
1 cup flour
1/4 cup powdered sugar

Top layer:

2 eggs
3/4 cup sugar
2T flour
2T lemon juice
Grated rind of lemon

Instructions:

Cream butter and sugar. Add flour. It will be crumbly. Spread in 8x8 inch pan by pressing it into the pan. Bake at 325° F for 15-20 minutes.

Beat eggs and add sugar, flour, lemon juice, and rind. Mix well and pour over hot crust. Bake at 325° F for 15-20 minutes. Remove and sprinkle with sifted powdered sugar. Cool slightly before cutting.

Notes:

Weird, but true -- our dog Scout loves these! When this recipe is doubled, it fits into a 10x15 pan. My recipe card says it's great with ice cream. That may be true, but we like them plain. Yum!
