Chicken Rice Casserole

This is yet another recipe from my old college roommate, Katie. This is an easy meal to make and is quite tasty. It's also another staple from our newlywed days. -- Stacy

Ingredients:

1 cup uncooked rice
1/2 cup butter
chicken breasts
1 pkg. onion soup mix
1 can mushroom soup
1 can water

Instructions:

Place rice, butter, and chicken in the bottom of a casserole dish. Over the top, pour on the onion soup mix, the mushroom soup, and water (don't mix--just pour on). Bake for 1.5 - 2 hours at 350°. Cover with tin foil for last half hour.

Notes:

Her original recipe said to use a whole chicken. We have always used boneless breasts. This smells really good while baking. Serve with salad or green vegetable.
