Chicken Cordon Bleu

This recipe always makes me think of my mother-in-law. This is one of her classic Sunday meals and one of my favorites to enjoy when we visit. -- Stacy

Ingredients:

Skinless, boneless chicken breasts
Ham (thinly sliced)
Swiss cheese
Bread crumbs with Parmesan cheese (about 1/2 of each)
Butter
Salt
Pepper

Sauce:
1/3 cup Lemon juice (about 1 lemon)
Can of cream of chicken soup
1/2 cup Sour cream

Instructions:

Beat chicken and season with salt and pepper. Wrap a piece of cheese and a little pat of butter in 1-2 slices of ham. Then wrap ham in chicken by folding chicken sides over and rolling. Dip in melted butter and then dip in bread crumbs. Pat into a rounded shape. Bake in a greased baking dish at 375° for 20-30 minutes.

Combine soup, sour cream, and lemon juice. Season, blend, and heat. (If sauce is too strong, dilute with milk). Serve by pouring over baked chicken.

Notes:

We usually serve these with a salad or green vegetable and rice or Rice-a-Roni, the San Francisco Treat! We also enjoy it with gourmet, spicy mustard.
