This recipe is much like Portuguese Stewed Chicken (Galinha Guizada), except it uses rice instead of potatoes. I recently made it for my children's friends during a play date and rumor has it they went home and announced that they wanted to move in with us. Yep, it's that good. Another one of my mom's comfort foods from childhood and super easy to make. --Stacy
Ingredients:
Chicken legs and thighs
Onion
Tomato Sauce
Garlic
Crushed red pepper
Salt
Red cooking wine
Instructions:
In a large pot, sauté onion. Add tomato sauce, garlic, and red pepper. Add the chicken parts (thighs, legs, etc.) and lightly brown. Then add wine. Add water to cover the chicken. Add rice. Salt to taste. Cook on stove until chicken and rice are done.
Notes:
We often add chouriço (Portuguese pork sausage) when we have it. We usually use a very wet, homemade crushed pepper sauce, though you can use dry flakes. Since it's a Portuguese recipe, there aren't any measurements. It's all in how it looks/tastes. And it looks/tastes delicious.
