Chimichangas

Oh, I love this recipe! I especially love how these keep for so long in the freezer and make a handy from-the-freezer meal when you're behind on cooking and need a meal quickly. This is another Katie Dahl classic. --Stacy

Ingredients:

1 lb. cooked beef, chicken, or pork
1 16 oz. jar salsa
1 16 oz. can refried beans
1 4 oz. can diced green chiles
1 1 1/2 oz. envelope taco or burrito seasoning mix
16 8" flour tortillas
16 oz. Monterey jack cheese cut into 5 1/2" slices

Instructions:

Slice meat or chicken (3 cups). In large skillet, combine meat, salsa, beans, undrained chiles, and seasonings. Mix, cook and stir over medium heat until heated through. Heat tortillas. Place 1/3 cup mixture and some cheese on each tortilla. Fold and roll. Wrap in foil and freeze (up to 6 months). Bake at 350° for 30-50 minutes. Remove and eat with salsa, sour cream, and rice and beans.

Notes:

Delicious meal! We also like to have undressed salad on the side of our Mexican meals.
