Elizabeth made this a lot for us when we were first married. It was always a welcome addition to a Sunday meal and we've made it more than a few times. Make this with a good prime rib and the meal will be fantastic. --Mark
Ingredients:
1 1/2 cups flour
3/4 tsp salt
3 eggs (at room temperature)
3/4 cup water
1/2 cup beef drippings
3/4 cup milk (at room temperature)
Instructions:
Mix flour and salt. Add milk and whisk. Beat the eggs into the batter. Add water and beat the mixture until frothy. Set aside for one hour.
Preheat the oven to 400 degrees. Pour off drippings and place into a 9 x 13 baking pan. Heat until sizzling. Pour the batter over the drippings and bake for 30 minutes or until golden brown.
