These pancakes are super easy to make and really delicious. Since they are made in the blender pouring the batter is a bit more controlled than when I try to use a measuring cup and then end up pouring out too much. Another plus is that I never have to worry about losing the handle of the measuring cup in the mixing bowl after which I need to fish it out and get half a pancake's worth of batter off of my fingers while the pancakes in the griddle start to burn. You get the idea. Also, they are very nutritious. --Mark
Ingredients:
1/2 cup wheat flour
1/2 cup oats
1 T raw sugar
1 tsp. baking powder
1/2 tsp. baking soda
3/4 cup buttermilk
1 tsp vanilla
2 T applesauce
1 egg
Instructions:
Place all ingredients in a blender and mix until batter is smooth. Pour small amounts onto a heated, oiled griddle or frying pan. Cook until both sides are golden brown.
Notes:
You can add nuts, blueberries, flax seed, or whatever else you'd like. This recipe is rather small so you may need to double it. If you don't have buttermilk on hand, which we never do, you can mix 1 tablespoon of lemon juice and enough milk to make 3/4 cup total. Let it sit until it starts to curdle and then add it to the blender. We also substitute 1 tablespoon of milled flax seed and 3 tablespoons of water for the egg.
