Twice-Baked Potatoes

These potatoes are great with so many main dishes and are well worth the little bit of work. --Mark

Ingredients:

Baked potatoes
½ C milk
¼ C butter
½ tsp salt
Dash pepper
Shredded cheese

Instructions:

Bake potatoes to your liking. Let cool until you are able to handle them. Slice each in half. Scoop out the inside of the potatoes leaving an intact shell. Mash potatoes with milk, butter, salt, and pepper. Beat until fluffy. Fill potato shells with the mixture. Top with cheese. Bake until golden.

Notes:

When you bake the potatoes, do not use aluminum foil. Simply wash, pierce with a fork, and bake at 400 ˚F for 45 minutes to 1 hour depending on the size of the potatoes. This makes the skins crispier. You can add onion or other spices to the potato mixture if you’d like. As always, experiment.
