Chili

This is the chili recipe we've always used. It's my Mom's recipe and, while we've toyed with this one, we haven't ever felt a need to search for a different recipe, because this one is so delicious and hearty. We like to make cornbread in our cast iron skillet when we make this. --Stacy

Ingredients:

1 lb ground beef or turkey, browned and drained
1 large onion, finely chopped
Garlic
3-4 T chili powder
4 cans of beans (take your pick), undrained
1 can chopped tomatoes
Salt and pepper to taste
1 T crushed red pepper
Diced green pepper (optional)

Instructions:

Cook ground meat and onion together. Drain. Add all of the ingredients. Add water as necessary. Bring to a boil. Simmer on low heat for 10-12 minutes, stirring occasionally. Serve with melted cheese.

Notes:

This is one of those recipes that is a little different every time. We substitute ground turkey and it tastes great. We add chouriço (Portuguese sausage) and it tastes great. Chorizo is not the same, by the way. Not even close. We use a different mix of beans each time--sometimes black, sometimes white, sometimes kidney, usually a mix of all of the above. Be sure not to drain any of your canned beans or vegetables. That way you get more nutrients and won’t need as much water.

Also, one can of Guinness beer and a healthy shot or two of Irish whiskey absolute make this recipe.
