Fluffy French Toast

We like this recipe because it's not the usual French toast recipe. These really do taste a bit fluffier and lighter. --Stacy

Ingredients:

¼ cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
½ tsp. ground cinnamon
1 tsp. vanilla extract
1 T white sugar
12 thick slices of bread

Instructions:

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla, and sugar until smooth.

Heat a lightly-oiled griddle or frying pan over medium heat.

Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Notes:

There is never enough liquid for 12 slices of bread, so we always end up making more. Another option is to use small slices of bread. We especially like to make this with small French or Italian loaves. We tend to overload the French toast with cinnamon—a lot more than ½ tsp. anyway.
