Dutch Babies

Some people call these "German Pancakes," too. Though this is considered a breakfast item, it is also my absolute favorite nighttime snack. It's salty and just the right combination of soft and crispy. It is a buttery treat for the senses. It looks gorgeous, smells fantastic, and tastes absolutely delicious! We make it in a cast iron skillet. I love, love, love this recipe and am forever grateful to my old college roommate Katie for sharing this recipe with me. We make it almost every time we have overnight guests (just multiply the recipe). It's especially yummy with farm fresh eggs. --Stacy

Ingredients:

1 egg - ¼ cup flour - ¼ cup milk - 2 T butter (rough chunks)

or

6 eggs - 1 ½ cups flour - 1 ½ cups milk - 12 T butter

Instructions:

Mix all of the ingredients. Bake in a greased pan or cast iron skillet at 400˚F for 20 to 25 minutes. Salt to taste.

Notes:

You can multiply the recipe to feed more people. One egg will make a decent serving for one person. For 6 eggs, use 2 9X13 pans or 2 cast iron skillets. You will have to experiment with your own pans and cooking time to get the consistency you like. We prefer to make this in a cast iron skillet as it tastes and looks better that way. You can serve these with salt or with something sweet like powdered sugar or jam. You can eat them for breakfast, snack, late-night snack, anytime snack, etc.
