Kate’s Blueberry Muffins

Kate came up with this recipe (mostly) on her own when she was about 6 or 7. They are actually quite good. --Mark

Ingredients:

2 cups flour
½ cups sugar
1 tsp. baking powder
½ tsp. salt
1 egg
2/3 cups milk
3 T oil
1 cup blueberries

Instructions:

Mix all the ingredients. Add additional milk if the batter is too stiff or dry. Spoon into muffin tins and bake for 15-20 minutes at 375 ˚F. Kate says, “Then pull them out and cool them and then you can eat them!”

Notes:
These aren’t as sweet as other muffins we've tried, but we like them that way. We love to make mini muffins. These take a bit less time. Start checking for doneness at around 12 minutes and see.
